S'mores Brownie Cups

Summer is in full swing and it is time to take the classic campfire treat s'mores to a whole new level.  Fudgey brownie with gooey marshmallows and chocolate sure sounds like the perfect dessert for your next party!


S'mores Brownie Cups
{Yields: 12}

1 box Betty Crocker Supreme Chocolate Chunk Brownie Mix
¼ cup water
⅓ cup Vegetable oil 
1 egg
¼ cup graham cracker crumbs
60 mini marshmallows (about 5 per brownie cup)
2 bars (1.55 oz each) Hershey's milk chocolate, broken into 24 pieces

Preheat your oven to 350 degrees and add baking liners into a 12 regular sized muffin tin.  Spray the bottoms of the liners with cooking spray and set aside.  Then cut the 2 bars of Hershey's bars into 24 pieces and place them in the fridge. 

Make the brownie batter as directed on the box and fill each muffin cup with 2 tablespoons of batter.  I used a cookie scoop and it made the process a lot easier!  

Bake for 18-20 minutes or until the edges and tops of the brownies are set.  Remove from the oven and top each brownie cup with 5 mini marshmallows.  Place the muffin tin back into the oven for 1 to 2 minutes or until the marshmallows have softened.  

Remove from oven and allow to cool for a few minutes in the pan.  Then remove and transfer brownie cups to a wire cooling rack.  Sprinkle about a ½ teaspoon of graham cracker crumbs on top of the marshmallows and add 2 chocolate pieces.

Serve warm or at room temperate.  Enjoy!

Homemade Cake Batter Cookies

It's officially the sweetest time of the year!  Valentine's Day to me is the perfect time to bake sweet treats to share with friends and family.  

These homemade cake batter cookies are just too cute and so simple to whip up.  All you need are a few basic ingredients, some cute sprinkles (found mine at Homegoods and Target) and season M&M's.  If you are still looking for something to bake and share for Friday, be sure to give these a try.


Homemade Cake Batter Cookies
{Yield: 24 cookies}

2 sticks unsalted butter, soften to room temperature
1 ¼ cups granulated sugar
2 tsp. pure vanilla extract
1 tsp. almond extract
1 large egg
2 ½ cups all-purpose flour
¼ cup cornstarch
1 tsp. baking soda
½ tsp. Kosher salt
½ cup sprinkles
½ cup M&M's
½ cup white chocolate chips

Preheat your over to 375 degrees and line a baking sheet with a Silipat non-stick silicone liner or parchment paper and set aside.

In a stand-up mixer with the paddle attachment, beat the butter and sugar together on medium-high speed for 2 minutes or until the mixture is light and fluffy.  Scrape down the sides of the bowl and add in the vanilla extract, almond extract, and egg.  Beat until combined and scrape down the sides of the bowl again.

Add in the all-purpose flour, cornstarch, baking soda, and salt.  With the mixer on low, slowly mix together the wet and dry ingredients just until combined.  Add in the sprinkles, M&M's and white chocolate chips and mix until combined.  Then using a cookie scoop, scoop the dough balls and place them on the lined cookie sheet about 2 inches apart.  Lightly pat the tops of the cookie dough down to get a flatter, more round cookie and then top each with a few extra M&M's!



Bake for 8 to 10 minutes or until the edges turn lightly golden brown.  These cookies are better when they are slightly undercooked, trust me!

Remove from the oven and allow the cookies to cool on a wire rack.  Enjoy!

How was your week?  Mine felt a little long, but maybe because I was recovering from an amazingly fun, beautiful but super hard overnight winter hike in the mountains of New Hampshire...who knows, but I am just happy to have the weekend here!

If you are looking for a fun app to enjoy during the Super Bowl on Sunday, I think this recipe would be a delicious one.  Cheese + buffalo = a major win in my book!

This was an interesting article about millennials and hobbies from Vice.

Speaking about hobbies, at the beginning of the year I started to needlepoint as a way to relax and unwind from the day.  I already finished my first piece (a little lobster) and have two more canvases lined up.  You could say that I am #addicted and will probably go broke because there are just so many great handpainted canvases I want to get my hands on!  If you are wanting to get started with needlepoint, check out this blog post.  Also, here is a great beginner video tutorial that I found to be super helpful.

I LOVE these jeans that I got up from Madewell before the holidays.  They look so flattering on all different body types and have the perfect stretch to them.

Picked up this candle at Target the other night and it smells so fresh and nice in my apartment.

I got these super cute slip-on sneakers a couple of months ago and they are one of the most comfortable pairs that I own/find myself waiting to wear ALL THE TIME.
